Vegetarian Fried Spring Rolls

Summary:

This is a crispy and flavorful vegetarian snack, where spring rolls are filled with seasoned vegetables and fried to a golden perfection, best served with dipping sauce.

Ingredients:

Spring roll wrappers 10 pieces

Carrot 100g (julienned)

Cabbage 100g (shredded)

Shiitake mushrooms 80g (sliced)

Glass noodles 50g (soaked and chopped)

Soy sauce 1 tbsp

Vegetarian oyster sauce 1 tbsp

Salt to taste

White pepper powder to taste

Cornstarch slurry (for sealing)

Cooking oil (for frying)

Instructions:

1.Prepare ingredients:
Julienne the carrot, shred the cabbage, slice the shiitake mushrooms, and soak the glass noodles until soft, then chop them.

2.Cook the filling:
Heat a little oil in a pan, stir-fry the carrot, cabbage, and shiitake mushrooms for 2 minutes. Add the glass noodles, soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Mix well and let cool.

3.Wrap the spring rolls:
Place a wrapper on a flat surface, add the filling, fold the bottom up, tuck in the sides, and roll tightly. Seal the edge with cornstarch slurry.

4.Fry the spring rolls:
Heat oil to 170°C, fry the spring rolls until golden brown on both sides, then drain on paper towels.

5.Serve and enjoy:
Serve hot with sweet chili sauce or vinegar dip for extra flavor.
