Braised Ginkgo Nuts with Pumpkin

Summary:

This is a nourishing and mildly sweet vegetarian stew, where the subtle aroma of ginkgo nuts blends perfectly with the natural sweetness of pumpkin, making it a warm and comforting dish.

Ingredients:

Ginkgo nuts 100g (shelled and peeled)
Pumpkin 300g (peeled and cubed)
Red dates 6 (pitted)
Goji berries 10g
Vegetarian broth 800ml (or water)
Salt to taste
White pepper powder to taste

Instructions:

1.Prepare ingredients:
Shell and peel the ginkgo nuts, rinse them. Peel and cube the pumpkin. Pit the red dates and rinse the goji berries.

2.Blanch ginkgo nuts:
Bring a pot of water to a boil, blanch the ginkgo nuts for 2 minutes to remove bitterness, then drain.

3.Simmer the base:
In a pot, add the vegetarian broth or water, along with the ginkgo nuts and red dates. Bring to a boil, then simmer over low heat for 15 minutes to release flavors.

4.Add pumpkin:
Add the pumpkin cubes and continue simmering for another 10 minutes until the pumpkin is tender but not mushy.

5.Season and finish:
Stir in the goji berries, salt, and white pepper powder. Let cook for another 2 minutes before turning off the heat. Serve warm.
