Whole Wheat Vegetable Sandwich
Summary:
This is a nutritious and refreshing vegetarian sandwich, filled with crisp vegetables and plant-based spread, perfect for breakfast or a light meal.
Ingredients:
Whole wheat bread slices 4
Lettuce as needed (washed and drained)
Cucumber 50g (sliced)
Tomato 1 (sliced)
Red cabbage 50g (shredded)
Cooked hummus 2 tbsp (optional)
Vegan mayo or plant-based dressing 2 tbsp
Black pepper to taste
Salt to taste
Instructions:
1.Prepare ingredients:
Wash and drain lettuce, slice cucumber and tomato, and shred red cabbage.
2.Spread sauce:
Spread vegan mayo or dressing evenly on one side of a whole wheat bread slice.
3.Layer vegetables:
Place lettuce, cucumber slices, tomato slices, and shredded red cabbage on the bread. Optionally, add hummus for extra texture. Sprinkle salt and black pepper.
4.Assemble sandwich:
Cover with another slice of whole wheat bread, pressing gently to hold everything together.
5.Serve and enjoy:
Slice in half if desired and serve with juice or tea. Enjoy!
