Braised Shiitake Mushrooms with Choy Sum
Summary:
This is a vibrant and delicate vegetarian dish, where crisp choy sum pairs with a rich shiitake mushroom sauce for a nutritious and flavorful meal.
Ingredients:
Choy sum 300g (washed and drained)
Shiitake mushrooms 150g (sliced, fresh or rehydrated dried)
Red bell pepper 50g (sliced, for color and flavor)
Soy sauce 1 tbsp
Vegetarian oyster sauce 1 tbsp
Salt to taste
White pepper powder to taste
Cornstarch slurry 1 tsp (cornstarch mixed with water)
Cooking oil 1 tbsp
Water as needed
Instructions:
1.Prepare ingredients:
Wash and drain the choy sum. Slice the shiitake mushrooms and red bell pepper.
2.Blanch the choy sum:
Bring a pot of water to a boil, blanch the choy sum for 30 seconds, then transfer to cold water to retain its bright color. Drain and set aside.
3.Stir-fry the mushrooms:
Heat oil in a pan, add the shiitake mushrooms, and stir-fry for 2 minutes until slightly softened.
4.Make the sauce:
Add soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Pour in some water and simmer for 2 minutes. Stir in the cornstarch slurry to slightly thicken the sauce.
5.Finish and serve:
Arrange the blanched choy sum neatly on a plate, pour the shiitake mushroom sauce over the top, garnish with red bell pepper slices, and serve immediately.
