Sweet Potato Pancakes

Summary:

This is a soft and crispy vegetarian snack, made mainly from sweet potatoes, with a naturally sweet taste and simple preparation.

Ingredients:

Sweet potatoes 300g (peeled and chopped)
Glutinous rice flour 100g
Granulated sugar 20g (optional)
Water as needed
Cooking oil as needed

Instructions:

1.Steam the sweet potatoes:
Peel and chop the sweet potatoes, then steam them for 15-20 minutes until soft.

2.Make the dough:
Mash the steamed sweet potatoes while hot, then mix with glutinous rice flour and sugar. Gradually add water and knead into a soft, non-sticky dough.

3.Shape the pancakes:
Take a portion of the dough, roll it into a ball, and flatten it into a small pancake.

4.Pan-fry the sweet potato pancakes:
Heat a little oil in a pan, then cook the pancakes over low heat until golden brown on both sides.
5.Serve and enjoy:
Once cooked, remove from the pan and serve warm or at room temperature for a chewy and sweet treat.
