Braised Soybeans with Eggplant

Summary:

This is a soft and flavorful vegetarian stew, where tender eggplant absorbs the rich aroma of soybeans, creating a hearty and satisfying dish.

Ingredients:

Soybeans 100g (soaked for at least 4 hours or overnight)
Eggplant 300g (cut into chunks)
Red bell pepper 50g (sliced)
Soy sauce 1 tbsp
Vegetarian oyster sauce 1 tbsp
Salt to taste
White pepper powder to taste
Cooking oil 1 tbsp
Water as needed

Instructions:

1.Prepare ingredients:
Soak the soybeans for at least 4 hours. Cut the eggplant into chunks and slice the red bell pepper.

2.Cook the soybeans:
Bring a pot of water to a boil, add the soaked soybeans, and simmer for 20 minutes until tender. Drain and set aside.

3.Stir-fry the eggplant:
Heat oil in a pan, add the eggplant, and stir-fry until slightly golden and soft.

4.Braise the dish:
Add the cooked soybeans, then season with soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Stir well and add water. Simmer over low heat for 10 minutes.

5.Finish and serve:
Add the red bell pepper, stir to combine, and let the sauce slightly reduce before turning off the heat. Serve warm.
