红烧萝卜
简介:
这是一道软糯入味、咸甜适口的斋食家常菜,白萝卜充分吸收红烧酱汁,呈现浓郁香气。
材料:
白萝卜 500克(去皮切滚刀块)
红椒 50克(切丝)
生抽 1.5汤匙
老抽 1汤匙
素蚝油 1汤匙
冰糖 10克
盐 适量
白胡椒粉 适量
八角 1颗
香叶 2片
食用油 1汤匙
清水 适量
做法:
1.准备食材:
白萝卜去皮洗净,切滚刀块;红椒切丝备用。
2.焯水去涩:
锅中加水烧开,放入白萝卜块焯烫2分钟,捞出沥干备用。
3.炒糖色:
热锅加油,放入冰糖,小火炒至融化呈浅棕色糖浆。
4.翻炒萝卜:
放入萝卜块翻炒均匀,裹上糖色。
5.炖煮入味:
加入生抽、老抽、素蚝油、八角、香叶、盐和白胡椒粉,翻炒均匀后加清水没过萝卜,盖盖小火炖煮15-20分钟。
6.收汁装盘:
待汤汁浓稠、萝卜入味后加入红椒丝翻匀,关火盛出即可享用。

Braised Daikon Radish
Summary:
This is a rich, tender, and flavorful vegetarian dish, where daikon radish absorbs the savory-sweet braising sauce for a comforting and hearty taste.
Ingredients:
Daikon radish 500g (peeled and cut into chunks)
Red bell pepper 50g (sliced)
Soy sauce 1.5 tbsp
Dark soy sauce 1 tbsp
Vegetarian oyster sauce 1 tbsp
Rock sugar 10g
Salt to taste
White pepper powder to taste
Star anise 1 piece
Bay leaves 2
Cooking oil 1 tbsp
Water as needed
Instructions:
1.Prepare ingredients:
Peel and cut daikon into chunks. Slice the red bell pepper.
2.Blanching:
Bring water to a boil, blanch the daikon for 2 minutes, then drain to remove bitterness.
3.Caramelize sugar:
Heat oil in a pan, add rock sugar, and stir over low heat until melted and golden.
4.Stir-fry daikon:
Add daikon chunks and stir to coat with caramelized sugar.
5.Braising:
Add soy sauce, dark soy sauce, vegetarian oyster sauce, star anise, bay leaves, salt, and white pepper powder. Add water to cover the radish. Cover and simmer for 15-20 minutes on low heat.
6.Finish and serve:
When sauce thickens and radish is tender, add red bell pepper slices, stir well, then turn off the heat and serve.
