芋头塔

简介:

这是一道外酥内香、口感绵软的斋食创意菜,细腻芋泥与香脆塔皮完美结合,甜咸皆宜,健康又美味。

材料:

芋头 300克(去皮切块)

低筋面粉 150克

植物黄油 60克(无奶配方)

细砂糖 20克

盐 适量

生抽 1汤匙

素蚝油 1汤匙

白胡椒粉 适量

清水 适量

做法:

1.准备芋头泥:

芋头去皮切块,入蒸锅蒸20分钟至软烂,取出压成细腻芋泥。

2.调味芋泥:

在芋泥中加入少许盐、生抽、素蚝油、白胡椒粉,搅拌均匀备用。

3.制作塔皮:

将低筋面粉、植物黄油、细砂糖和少许盐混合,逐步加入适量清水,揉成光滑面团,静置30分钟。

4.成型烘烤:

将面团擀薄后铺入模具压实,底部用叉子戳孔,铺上一层调味芋泥,表面可装饰少许芋头块。烤箱180℃烤25分钟。

5.完成装盘:

烘烤至塔皮酥脆、芋泥表面微微焦黄,取出晾凉后脱模,即可享用。

Taro Tart

Summary:

This is a crispy yet creamy vegetarian tart, combining smooth taro filling with a flaky crust, perfect as a savory or slightly sweet dish.

Ingredients:

Taro 300g (peeled and cubed)

Cake flour 150g

Plant-based butter 60g

Granulated sugar 20g

Salt to taste

Soy sauce 1 tbsp

Vegetarian oyster sauce 1 tbsp

White pepper powder to taste

Water as needed

Instructions:

1.Prepare taro mash:

Steam peeled and cubed taro for 20 minutes until soft, then mash into a smooth paste.

2.Season taro filling:

Mix taro paste with a pinch of salt, soy sauce, vegetarian oyster sauce, and white pepper powder until well combined.

3.Make tart dough:

Combine cake flour, plant-based butter, sugar, and a pinch of salt. Gradually add water and knead into a smooth dough. Let rest for 30 minutes.

4.Shape and bake:

Roll out the dough and press it into tart molds. Prick the bottom with a fork, then fill with the seasoned taro paste. Optionally, decorate with small taro cubes. Bake at 180°C for 25 minutes until golden.

5.Serve and enjoy:

Allow to cool slightly, remove from molds, and serve warm or at room temperature.
