香酥杏鲍菇

简介:

这是一道外酥里嫩、鲜香十足的斋食小吃,杏鲍菇经腌制、裹粉和炸制,口感丰富,风味独特。

材料:

杏鲍菇 300克(撕成粗条)

生抽 1汤匙

素蚝油 1汤匙

盐 适量

白胡椒粉 适量

五香粉 适量

玉米淀粉 适量(裹粉用)

面粉 适量(裹粉用)

清水 适量

食用油 适量(炸制用)

做法:

1.准备食材:

杏鲍菇洗净撕成粗条,沥干水分备用。

2.腌制入味:

杏鲍菇加入生抽、素蚝油、盐、白胡椒粉和五香粉,拌匀腌制15分钟。

3.准备裹糊:

混合玉米淀粉和面粉,加入适量清水调成稍粘稠的面糊。

4.裹粉炸制:

腌好的杏鲍菇均匀裹上一层面糊,油锅加热至六成热,逐条放入杏鲍菇炸至金黄酥脆,捞出沥油。

5.完成装盘:

盛盘后可撒少许椒盐或辣椒粉提味,外酥里嫩,香气四溢。

Crispy King Oyster Mushrooms

Summary:

This is a crispy-on-the-outside, tender-on-the-inside vegetarian snack, where king oyster mushrooms are marinated, battered, and fried to perfection.

Ingredients:

King oyster mushrooms 300g (torn into thick strips)

Soy sauce 1 tbsp

Vegetarian oyster sauce 1 tbsp

Salt to taste

White pepper powder to taste

Five-spice powder to taste

Cornstarch as needed (for batter)

Flour as needed (for batter)

Water as needed

Cooking oil (for frying)

Instructions:

1.Prepare mushrooms:

Clean the king oyster mushrooms and tear them into thick strips. Pat dry.

2.Marinate:

Season the mushrooms with soy sauce, vegetarian oyster sauce, salt, white pepper powder, and five-spice powder. Mix well and marinate for 15 minutes.

3.Prepare batter:

Combine cornstarch and flour, then gradually add water to form a slightly thick batter.

4.Coat and fry:

Dip the marinated mushrooms into the batter, ensuring an even coating. Heat oil to 60% hot, then fry the mushrooms until golden and crispy. Drain excess oil.

5.Serve:

Transfer to a plate and optionally sprinkle with chili powder or spiced salt. Enjoy the crispy texture and rich flavor.
