白灼菜心

简介:

这是一道保持蔬菜原汁原味的斋食清爽菜品,菜心脆嫩鲜绿,简单调味,清淡又健康。

材料:

菜心 300克(洗净)

红椒 30克(切丝)

生抽 1汤匙

素蚝油 1汤匙

香醋 1茶匙

盐 适量

白胡椒粉 适量

食用油 1汤匙

清水 适量

做法:

1.准备食材:

菜心洗净沥干,红椒切丝备用。

2.焯水菜心:

锅中加水烧开,加入少许盐和食用油,放入菜心焯水1分钟,捞出过凉水保持翠绿,沥干摆盘。

3.调制酱汁:

碗中加入生抽、素蚝油、香醋、白胡椒粉和少量清水,搅拌均匀成酱汁。

4.加热淋汁:

小锅加热少许油,将调好的酱汁加热至微微冒泡。

5.完成装盘:

将热酱汁淋在焯好的菜心上,撒上红椒丝点缀,即可享用。

Poached Choy Sum

Summary:

This is a light and healthy vegetarian dish that highlights the natural flavor of choy sum, served with a simple savory sauce.

Ingredients:

Choy sum 300g (washed)

Red bell pepper 30g (sliced)

Soy sauce 1 tbsp

Vegetarian oyster sauce 1 tbsp

Rice vinegar 1 tsp

Salt to taste

White pepper powder to taste

Cooking oil 1 tbsp

Water as needed

Instructions:

1.Prepare ingredients:

Wash the choy sum and slice the red bell pepper.

2.Blanch the choy sum:

Bring a pot of water to boil, add a pinch of salt and a bit of oil. Blanch the choy sum for 1 minute, then transfer to cold water to retain color. Drain and arrange on a plate.

3.Make sauce:

In a bowl, mix soy sauce, vegetarian oyster sauce, rice vinegar, white pepper powder, and a little water to form a sauce.

4.Heat and pour sauce:

Heat a bit of oil in a small pan, pour in the sauce, and warm it until slightly bubbling.

5.Finish and serve:

Pour the hot sauce over the choy sum, garnish with red pepper slices, and serve immediately.
