蒸茄子沙拉
简介:
这是一道清爽开胃的斋食凉菜,茄子蒸后软嫩清香,搭配酸甜微辣的调味汁,简单又健康。
材料:
长茄子 2根(洗净切条)
黄甜椒 50克(切丝)
红椒 50克(切丝)
香菜叶 适量(可选)
生抽 1汤匙
香醋 1汤匙
素蚝油 1汤匙
盐 适量
白胡椒粉 适量
辣椒油 1汤匙(可选)
白芝麻 适量
做法:
1.准备食材:
茄子洗净,切成长条;黄甜椒、红椒切丝,香菜叶备用。
2.蒸制茄子:
蒸锅加水烧开,放入茄条,大火蒸10-12分钟,至茄子变软,取出放凉。
3.调制酱汁:
碗中加入生抽、香醋、素蚝油、盐、白胡椒粉和辣椒油,搅拌均匀成凉拌汁。
4.组合拌匀:
蒸好的茄子撕成条状,与黄甜椒丝、红椒丝放入大碗,倒入调味汁,拌匀入味。
5.完成装盘:
撒上白芝麻和香菜叶点缀,盛盘即可享用,清爽开胃,色香味俱全。

Steamed Eggplant Salad
Summary:
This is a refreshing vegetarian salad where soft steamed eggplant is paired with a tangy, slightly spicy dressing, offering a healthy and flavorful dish.
Ingredients:
Long eggplants 2 (washed and cut into strips)
Yellow bell pepper 50g (sliced)
Red bell pepper 50g (sliced)
Cilantro leaves (optional)
Soy sauce 1 tbsp
Rice vinegar 1 tbsp
Vegetarian oyster sauce 1 tbsp
Salt to taste
White pepper powder to taste
Chili oil 1 tbsp (optional)
Toasted white sesame seeds to garnish
Instructions:
1.Prepare ingredients:
Wash and cut eggplants into long strips. Slice yellow and red bell peppers. Set aside cilantro leaves if using.
2.Steam the eggplant:
Bring water to a boil in a steamer. Place eggplant strips inside and steam for 10-12 minutes until soft. Let cool.
3.Make dressing:
In a bowl, mix soy sauce, rice vinegar, vegetarian oyster sauce, salt, white pepper powder, and chili oil. Stir well.
4.Combine salad:
Tear the steamed eggplant into strips. Combine with bell pepper slices in a bowl and pour in the dressing. Toss well.
5.Serve:
Sprinkle with sesame seeds and garnish with cilantro if desired. Serve chilled or at room temperature for a refreshing salad.
