红枣腰果炖银耳
简介:
这是一道滋补润肺、口感软糯又带坚果香脆的斋食甜品,红枣与银耳的清润搭配腰果的香脆,营养丰富。
材料:
银耳 15克(干银耳,泡发撕小朵)
红枣 8颗(去核)
腰果 30克
枸杞 10克
冰糖 适量
清水 1000毫升
做法:
1.准备食材:
银耳提前泡发,撕成小朵;红枣去核,枸杞泡水备用。
2.煮银耳:
锅中加清水,放入银耳,大火煮沸后转小火炖煮30分钟,至银耳软糯出胶。
3.加入配料:
放入红枣和腰果,继续炖煮15分钟,让食材互相融合出味。
4.调味收尾:
加入冰糖和枸杞,再煮5分钟,至冰糖完全融化,枸杞稍软即可。
5.完成享用:
盛入碗中,冷热皆可享用,口感丰富,清甜滋润。

Red Date and Cashew Stewed White Fungus
Summary:
This is a nourishing and comforting vegetarian dessert soup, combining the jelly-like texture of white fungus with the sweetness of red dates and crunchiness of cashews.
Ingredients:
Dried white fungus 15g (soaked and torn into small pieces)
Red dates 8 (pitted)
Cashews 30g
Goji berries 10g
Rock sugar to taste
Water 1000ml
Instructions:
1.Prepare ingredients:
Soak white fungus until soft, then tear into small pieces. Pit the red dates and soak the goji berries.
2.Cook white fungus:
In a pot, bring water to a boil, add white fungus, then simmer over low heat for 30 minutes until soft and gelatinous.
3.Add dates and cashews:
Add red dates and cashews, then continue simmering for another 15 minutes to blend the flavors.
4.Sweeten and finish:
Add rock sugar and goji berries, cook for another 5 minutes until the sugar dissolves and goji berries soften.
5.Serve:
Ladle into bowls and enjoy warm or chilled for a sweet and nourishing dessert.
