Clear Soup Noodles with Beech Mushrooms

Summary:

This is a light and flavorful vegetarian noodle dish, where beech mushrooms add natural umami to the clear broth for a simple yet nourishing meal.

Ingredients:

Beech mushrooms 100g (trimmed and washed)

Thin wheat noodles 150g

White radish 100g (julienned)

Bok choy 50g (whole or chopped)

Soy sauce 1 tbsp

Vegetarian oyster sauce 1 tbsp

Salt to taste

White pepper powder to taste

Water 800ml

Cooking oil 1 tsp

Instructions:

1.Prepare ingredients:
Trim and wash the beech mushrooms, julienne the white radish, and wash the bok choy.

2.Make the broth:
In a pot, add 800ml of water and the white radish. Bring to a boil, then simmer for 5 minutes to enhance the broth’s flavor.

3.Cook the noodles:
In a separate pot, bring water to a boil, add the noodles, and cook for about 3-4 minutes until fully cooked. Drain and set aside.

4.Add mushrooms:
Add the beech mushrooms to the broth and simmer for 2 minutes until tender. Then, season with soy sauce, vegetarian oyster sauce, salt, and white pepper powder.

5.Assemble the dish:
Add the cooked noodles to the broth, place the bok choy in to blanch, and drizzle a little cooking oil for enhanced flavor. Serve hot.
