Dry Pot King Oyster Mushrooms

Summary:

This is a fragrant and flavorful vegetarian dish, where king oyster mushrooms are dry-fried and infused with rich seasonings, creating a chewy and delicious texture.

Ingredients:

King oyster mushrooms 300g (sliced thick)
Red bell pepper 50g (sliced)
Shiitake mushrooms 100g (sliced)
Soy sauce 1 tbsp
Vegetarian oyster sauce 1 tbsp
Doubanjiang (fermented chili bean paste) 1 tbsp
Salt to taste
White pepper powder to taste
Cooking oil 1 tbsp
Water as needed

Instructions:

1.Prepare ingredients:
Slice the king oyster mushrooms thickly, julienne the red bell pepper, and slice the shiitake mushrooms.

2.Pan-fry king oyster mushrooms:
Heat a small amount of oil in a pan, add the mushroom slices, and pan-fry over medium-low heat until both sides are slightly golden. Set aside.

3.Stir-frying shiitake mushrooms:
Add more oil to the pan, stir-fry the shiitake mushrooms until they release some moisture.

4.Adding seasonings:
Stir in the doubanjiang until fragrant, then add red bell pepper, soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Mix well.
5.Simmering in a dry pot:
Return the fried king oyster mushrooms to the pan, stir well, then pour in a little water and simmer for 2 minutes on low heat until fully infused with flavor. Transfer to a dry pot and serve hot.
