Fennel Stalks with Peanuts

Summary:

This is a light and refreshing vegetarian cold dish, combining the unique aroma of fennel stalks with the crunchiness of peanuts, simply seasoned for a delicious taste.

Ingredients:

Fennel stalks 200g (cut into sections)
Peanuts 100g
Soy sauce 1 tbsp
Rice vinegar 1 tbsp
Vegetarian oyster sauce 1 tbsp
Salt to taste
White pepper powder to taste
Sesame oil 1 tbsp

Instructions:

1.Prepare ingredients:
Wash and cut the fennel stalks into sections. Soak the peanuts for 2 hours, then drain.

2.Boiling peanuts:
Bring a pot of water to a boil, add the peanuts, and cook for 10 minutes. Drain and let cool.

3.Blanching fennel stalks:
Bring another pot of water to a boil, blanch the fennel stalks for 30 seconds, then rinse with cold water to retain their crispness.

4.Seasoning and mixing:
In a bowl, mix soy sauce, rice vinegar, vegetarian oyster sauce, salt, and white pepper powder. Add the peanuts and fennel stalks, then mix well.
5.Serving:
Drizzle sesame oil over the mixture, toss well, and serve immediately.
