Braised Chestnuts

Summary:

This is a rich and tender vegetarian dish, where chestnuts absorb the savory braising sauce, resulting in a flavorful and melt-in-your-mouth texture.

Ingredients:

Chestnuts 300g (peeled)

Red bell pepper 50g (sliced)

Soy sauce 1.5 tbsp

Dark soy sauce 1 tbsp

Vegetarian oyster sauce 1 tbsp

Rock sugar 10g

Salt to taste

White pepper powder to taste

Star anise 1 piece

Bay leaves 2 pieces

Cooking oil 1 tbsp

Water as needed

Instructions:

1.Prepare ingredients:
Peel the chestnuts and slice the red bell pepper.

2.Caramelizing sugar:
Heat oil in a pan, add rock sugar, and stir over low heat until melted and darkened.

3.Stir-fry chestnuts:
Add the chestnuts and stir well to coat them in the caramelized sugar.

4.Braising:
Add soy sauce, dark soy sauce, vegetarian oyster sauce, salt, white pepper powder, star anise, and bay leaves. Stir well, then add water. Cover and simmer over low heat for 15-20 minutes.

5.Finishing:
Once the sauce thickens, add the red bell pepper, stir briefly, then turn off the heat and serve.
